  • 4 medium zucchini
  • 12 ounces sausage of your choice, ground
  • 1 cup crushed fire roasted tomatoes

  • 1 teaspoon dried oregano
  • 1/2 teaspoon fennel seeds
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup Italian seasoned panko breadcrumbs
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • Fresh basil or parsley for garnish
