There is something so satisfying about the contrast between the warm, savory filling and the cool, crisp lettuce leaves. This recipe is a staple in my house because it comes together in minutes and is much lighter than ordering takeout.

My biggest tip is to make sure your lettuce is washed and dried well before you start cooking. Using a salad spinner works wonders, as it keeps the leaves crisp and ensures your sauce does not get watered down.

Ingredients

  • 1 tablespoon vegetable oil
  • 1 pound ground chicken
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1/2 cup water chestnuts, chopped
  • 1/4 cup soy sauce
  • 2 tablespoons hoisin sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon fresh ginger, grated
  • 1 head butter lettuce, leaves separated
  • 2 green onions, sliced for garnish

Instructions

    Heat the vegetable oil in a large skillet over medium high heat.

    Add the ground chicken to the skillet and cook until it is browned and no longer pink.

    Stir in the diced onion, minced garlic, and chopped water chestnuts, cooking for about 3 minutes until the onion is soft.

    Whisk the soy sauce, hoisin sauce, rice vinegar, and grated ginger together in a small bowl, then pour the mixture over the chicken.

    Simmer for 2 to 3 minutes until the sauce has thickened and coats the chicken evenly.

    Spoon the chicken mixture into individual butter lettuce leaves and garnish with sliced green onions before serving.

Store the chicken mixture in an airtight container in the fridge for up to three days. Keep the lettuce leaves separate and wrap them in a paper towel to stay crunchy. To make this even healthier, you can swap the hoisin sauce for a splash of tamari or coconut aminos.
