There is nothing quite like salmon tacos for a quick weeknight dinner. The combination of spiced, flaky fish and sweet mango salsa feels like a treat every single time.

My favorite thing about this recipe is how light it feels while still being very filling. If you have extra time, let the salmon sit in the spices for ten minutes before cooking to really help the flavor sink in.

Ingredients

  • 1 pound fresh salmon fillets
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper to taste
  • 8 small corn or flour tortillas
  • 1 cup diced fresh mango
  • 1/4 cup red onion, finely diced
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup sour cream or Greek yogurt
  • 1 tablespoon lime juice
  • 1 lime, cut into wedges for serving

Instructions

    Pat the salmon dry and season it well with the chili powder, cumin, smoked paprika, salt, and pepper.

    Heat the olive oil in a large skillet over medium high heat.

    Cook the salmon for about 4 to 5 minutes per side until it is opaque and flakes easily with a fork.

    While the fish cooks, stir together the mango, red onion, and half of the cilantro in a small bowl.

    In another small bowl, mix the sour cream or yogurt with the lime juice and the rest of the cilantro to make your sauce.

    Warm your tortillas in a clean pan or the microwave.
