Fresh Chimichurri Steak Salad

People love this dish because it is filling enough to be a main course but still feels light and refreshing. If you want to save some time, you can prep the chimichurri sauce a day before so the flavors have plenty of time to get to know each other.
Ingredients
- 1 pound flank steak
- 1 teaspoon olive oil
- Salt and black pepper to taste
- 4 cups mixed salad greens
- 1 can chickpeas, drained and rinsed
- 1 cucumber, sliced
- 1 cup cherry tomatoes, halved
- 1/2 cup crumbled feta cheese
- 1/2 cup fresh parsley, finely chopped
- 3 cloves garlic, minced
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 1/2 teaspoon red pepper flakes

Season the steak with salt and pepper on both sides.

Heat a tablespoon of oil in a skillet over medium high heat and cook the steak for about 4 to 5 minutes per side until it reaches your preferred level of doneness.

Remove the steak from the pan and let it rest on a cutting board for at least 5 minutes before slicing it into thin strips.

In a small bowl, whisk together the parsley, minced garlic, 1/4 cup olive oil, red wine vinegar, and red pepper flakes to make your chimichurri dressing.

Place the greens in a large serving bowl and top with the chickpeas, cucumber, cherry tomatoes, and feta cheese.

Arrange the sliced steak on top of the salad and drizzle the chimichurri dressing over the entire dish before serving.
