These Greek chicken bowls are one of my favorite things to make for a busy week. They are light, refreshing, and full of flavor thanks to the simple marinade and creamy tzatziki sauce.

I love prepping these ahead of time for easy lunches. If you want the best results, make sure you let the chicken marinate for at least thirty minutes so the herbs really soak into the meat.

Ingredients

  • 1 pound chicken breast, cut into bite sized pieces
  • 2 tablespoons olive oil
  • 1 tablespoon dried oregano
  • 2 cloves garlic, minced
  • 1 teaspoon lemon juice
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1/2 cup crumbled feta cheese
  • 1/2 cup tzatziki sauce
  • 4 cups chopped romaine lettuce

Instructions

    Whisk the olive oil, oregano, garlic, and lemon juice in a small bowl.

    Toss the chicken pieces in the marinade and let them sit for at least thirty minutes.

    Heat a large skillet over medium heat and cook the chicken until it is golden brown and cooked through.

    Divide the chopped romaine lettuce between four bowls.

    Top the lettuce with the cooked chicken, cucumber, cherry tomatoes, and red onion.

    Sprinkle each bowl with feta cheese and add a generous dollop of tzatziki sauce before serving.

Store the dressing separately if you are prepping these for the next day to keep the lettuce crisp. These bowls stay fresh in the fridge for up to three days. You can add olives or chickpeas if you want a bit of extra texture.
