Fresh Homemade Strawberry Pie
This fresh strawberry pie has a sweet graham cracker crust and a creamy maple whipped topping that makes it the perfect summer treat.
dailyrecipesbook.comThis pie is a favorite in my house, especially when the weather gets warm and the berries are perfectly ripe. It reminds me of the ones my mom and grandma used to make, with that bright red glaze and plenty of cold, sweet fruit. My kids love helping with this one, and it always disappears fast at family gatherings.
The secret is the homemade graham cracker crust. I always make mine from scratch because the salty sweetness balances the berries so well. Just make sure to dry your strawberries thoroughly after washing them so the glaze stays thick and holds everything together.
Ingredients
- 1 1/2 cups graham cracker crumbs
- 5 tablespoons sugar
- 7 tablespoons salted butter, melted
- 1/2 cup sugar
- 2 tablespoons cornstarch
- 1 1/2 cups cold water
- 3 ounces strawberry gelatin powder
- 5 cups fresh strawberries, hulled and halved
- 3/4 cup heavy whipping cream
- 4 ounces cream cheese, softened
- 1/4 cup maple syrup
Instructions
- 1
Preheat your oven to 350 degrees.
- 2
Stis the graham cracker crumbs, 5 tablespoons of sugar, and melted butter together in a bowl.
- 3
Press the mixture firmly into a 9 inch pie plate and bake for 10 minutes, then set it aside to cool completely.
- 4
Wash the strawberries and pat them dry with a paper towel, then remove the green tops and slice large berries in half.
- 5
In a small saucepan, whisk together the remaining sugar, cornstarch, and water over medium low heat.
- 6
Stir the mixture constantly until it thickens and begins to bubble, then keep cooking for 2 more minutes.
- 7
Whisk in the strawberry gelatin powder until it is fully dissolved, then remove the pan from the heat and let it cool slightly.
- 8
Place half of the strawberries into the cooled crust and pour a portion of the glaze over them, moving the pan slightly so the glaze fills the gaps.
- 9
Add the remaining berries on top and cover them with the rest of the glaze, pressing them together so they are snug.
- 10
Place the pie in the refrigerator for 4 to 6 hours until the filling is firm.
- 11
For the topping, beat the heavy cream in a bowl until soft peaks form.
- 12
In a separate bowl, beat the softened cream cheese and maple syrup until the mixture is smooth and creamy.
- 13
Gently fold the cream cheese mixture into the whipped cream until combined.
- 14
Serve slices of the cold pie with a large dollop of the cream topping on each piece.
๐ก Tips
To keep the crust crisp, wait to add the topping until right before you serve the pie. This dessert is best enjoyed within 24 hours while the fruit is at its freshest. If your berries are quite tart, feel free to add an extra quarter cup of sugar to the glaze mixture.
