This mango salad is one of my favorite meals when the weather warms up. It brings together sweet mango, fresh berries, and crisp greens, all topped with tender chicken and creamy avocado. It is truly a crowd pleaser because it feels light but still keeps you full.

My favorite trick is to use the dressing as a marinade for the chicken before grilling. It makes the meat so flavorful and ties every single component together perfectly.

Ingredients

  • 2 large chicken breasts
  • 4 cups mixed lettuce and spinach
  • 1 ripe mango, cubed
  • 1 cup strawberries, sliced
  • 1 cucumber, sliced
  • 1 avocado, sliced
  • 1/2 cup crumbled feta cheese
  • 1/2 cup candied pecans
  • 1/4 cup olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • Salt and black pepper to taste

Instructions

    Whisk the olive oil, apple cider vinegar, honey, mustard, salt, and pepper in a small bowl until smooth.

    Place the chicken breasts in a shallow dish and pour half of the dressing over them to marinate for at least twenty minutes.

    Grill the chicken over medium heat until fully cooked through, then let it rest for five minutes before slicing into strips.

    Combine the lettuce, spinach, mango, strawberries, cucumber, and avocado in a large salad bowl.
