Fresh Mojo Salmon Bowls

Ingredients
- 2 salmon fillets
- 1/2 cup orange juice
- 2 tablespoons lime juice
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon ground cumin
- 2 cups cooked white or brown rice
- 1 can black beans, rinsed and drained
- 1 cup fresh pineapple, diced
- 1 ripe avocado, sliced
- 1/4 cup red onion, thinly sliced
- Fresh cilantro for garnish

Whisk together the orange juice, lime juice, minced garlic, oregano, and cumin in a small bowl to make your mojo marinade.

Place the salmon fillets in a shallow dish and pour half of the marinade over them. Let the fish sit for about 15 minutes while you get the other ingredients ready.

Heat a nonstick pan over medium high heat. Add the salmon fillets and cook for about 4 to 5 minutes on each side until the fish flakes easily with a fork.

While the salmon cooks, gently warm the black beans in a small pot with the remaining mojo sauce.

To assemble the bowls, divide the cooked rice into two bowls. Top each with a salmon fillet, a scoop of black beans, diced pineapple, and fresh avocado slices.
