These brownies are my go to recipe when I want something sweet without all the fuss. They are incredibly fudgy and manage to be delicious without any flour, refined sugar, butter, or eggs.

My best tip for success is to make sure your dates are soft. If they feel a bit dry, soak them in warm water for about ten minutes before you blend them to get a smooth batter.

Ingredients

  • 2 cups pitted Medjool dates
  • 1 cup walnuts
  • 1/2 cup unsweetened cocoa powder
  • 1/4 cup almond butter
  • 1 teaspoon vanilla extract
  • 1 pinch sea salt

Instructions

  1. 1

Place the walnuts in a food processor and pulse until they are finely ground.

  2. 2

Add the pitted dates to the food processor and pulse until the mixture starts to clump together.

  3. 3

Add the cocoa powder, almond butter, vanilla extract, and salt to the bowl.

  4. 4

Process the mixture until a thick, uniform dough forms.

  5. 5

Press the dough firmly into a small square baking dish lined with parchment paper.

  6. 6

Refrigerate the brownies for at least one hour to let them set before cutting them into squares.

๐Ÿ’ก Tips

Store these brownies in the refrigerator for up to one week to keep them firm. You can also keep them in the freezer if you want them to last a little longer for a quick snack.
