Garlic Lemon Chicken Scampi

My top tip for this recipe is to keep a close eye on your garlic while it sautรฉs. You want it golden and fragrant, not burnt, so keep the heat low and slow to get the best flavor for your sauce.
Ingredients
- 2 chicken breasts, cut into bite sized pieces
- 1/2 cup grated Parmesan cheese
- 1/4 cup flour
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 3 tablespoons olive oil
- 2 tablespoons butter
- 4 cloves garlic, minced
- 1/4 cup fresh lemon juice
- 1/2 cup chicken broth
- 8 ounces linguine or spaghetti
- 2 cups fresh baby spinach
- 1 tablespoon fresh parsley, chopped

Bring a large pot of salted water to a boil and cook the pasta according to the package instructions until al dente.

In a shallow bowl, mix together the flour, Parmesan cheese, salt, and pepper. Toss the chicken pieces in this mixture until they are lightly coated.

Heat the olive oil in a large skillet over medium heat. Add the chicken and cook for about 5 to 7 minutes until it is golden brown and cooked through. Remove the chicken from the pan and set it aside.

In the same skillet, melt the butter. Add the garlic and cook for about one minute until it smells wonderful.

Pour in the chicken broth and lemon juice. Let the sauce simmer for about 3 minutes to reduce slightly.

Add the spinach to the skillet and stir until it just starts to wilt.

Return the cooked chicken to the pan and toss in the drained pasta. Stir everything together so the sauce coats the noodles, then serve it hot with a sprinkle of fresh parsley.
