Garlic Steak and Quinoa Bowls

Ingredients
- 1 pound sirloin steak
- 1 cup quinoa, rinsed
- 2 cups water or beef broth
- 1 cup cherry tomatoes, halved
- 1/2 cup pickled red onions
- 1/2 cup panko breadcrumbs
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 tablespoon butter
- Salt and black pepper to taste

Combine the quinoa and water in a medium pot. Bring to a boil, then cover and simmer for about 15 minutes until the water is absorbed. Fluff with a fork and set aside.
