There is something so comforting about a big pan of roasted potatoes. These Greek style potatoes soak up all the lemon juice and olive oil, making them buttery on the inside while keeping the outside beautifully golden.

My secret to getting them just right is to make sure you use enough liquid. The potatoes need a little bit of time to braise in that delicious lemon sauce before they crisp up, so do not rush the roasting process.

Ingredients

  • 3 pounds Yukon Gold potatoes, peeled and cut into large wedges
  • 1/2 cup extra virgin olive oil
  • 1/2 cup fresh lemon juice
  • 1 cup vegetable or chicken broth
  • 4 cloves garlic, minced
  • 1 tablespoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Fresh parsley for garnish

Instructions

    Preheat your oven to 400 degrees Fahrenheit.

    Place the potato wedges in a large roasting pan or a deep baking dish.

    In a medium bowl, whisk together the olive oil, lemon juice, broth, minced garlic, oregano, salt, and pepper.

    Pour the liquid mixture over the potatoes and toss them until every piece is well coated.

    Roast the potatoes for about 45 to 60 minutes, tossing them halfway through, until they are fork tender and the liquid has reduced into a thick sauce.
