Melting potatoes are a favorite in my house because they transform simple ingredients into something truly special. You start by searing them in butter to get that beautiful golden crust, then finish them with broth and garlic to create a silky sauce that coats every bite.

My top tip for this recipe is to make sure your broth is high quality, since it reduces down into a concentrated sauce. These potatoes are perfect when you want a side dish that feels fancy but is actually quite simple to put together.

Ingredients

  • 3 pounds Yukon Gold potatoes, peeled and cut into 1 inch thick rounds
  • 4 tablespoons unsalted butter, melted
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 cup chicken broth
  • 4 cloves garlic, minced
  • 2 sprigs fresh rosemary or thyme

Instructions

  1. 1

Preheat your oven to 400 degrees Fahrenheit.

  2. 2

Place the potato rounds in a large bowl and toss them with the melted butter, salt, and pepper until they are well coated.

  3. 3

Arrange the potatoes in a single layer in a large baking dish or cast iron skillet.

  4. 4

Roast the potatoes for 20 minutes, then flip them over and roast for another 15 minutes until they are golden brown on both sides.

  5. 5

Whisk the chicken broth and minced garlic together, then pour the mixture into the pan around the potatoes.

  6. 6

Add the herbs to the pan and return it to the oven for 15 to 20 minutes, or until the liquid has mostly absorbed and the potatoes are very soft.

  7. 7

Serve immediately with a spoonful of the pan sauce drizzled over the top.

๐Ÿ’ก Tips

These are best served right away while the edges are crispy. If you have leftovers, keep them in an airtight container in the fridge for up to three days and reheat them in the oven to maintain their texture.
