These peanut chicken bowls are a favorite in my kitchen because they are so easy to pull together on a busy weeknight. I love how the creamy sauce ties everything together with the fresh cucumber and protein packed edamame. It is the perfect balance of flavors and textures for a healthy dinner.

For the best results, try to marinate your chicken for at least thirty minutes before grilling. If you have extra time, feel free to add shredded carrots or thinly sliced red cabbage to the salad for even more crunch and color.

Ingredients

  • 2 chicken breasts
  • 2 cups cooked rice or quinoa
  • 1 cup shelled edamame
  • 1 cup diced cucumber
  • 1/4 cup creamy peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice
  • 1 tablespoon honey
  • 1 tablespoon warm water
  • 1/4 cup roasted peanuts, chopped
  • Fresh cilantro for garnish
