Simple Garlic Gailan with Oyster Sauce
This classic Chinese vegetable dish features tender crisp broccoli stems coated in a savory and glossy sauce.
dailyrecipesbook.comGailan is a staple in my kitchen because it is so quick to prepare and tastes just like the version you get at your favorite restaurant. The slight bitterness of the greens balances perfectly with the salty and sweet oyster sauce.
My biggest tip is to make sure your water is at a rolling boil before you add the stalks. This helps them cook evenly and stay a beautiful bright green color.
Ingredients
- 1 pound fresh gailan (Chinese broccoli)
- 2 tablespoons oyster sauce
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
- 1 teaspoon sugar
- 3 cloves garlic, minced
- 1 tablespoon vegetable oil
- 2 tablespoons water
Instructions
- 1
Wash the gailan thoroughly and trim about an inch off the bottom of the tough stems. If the stems are very thick, you can slice them in half lengthwise.
- 2
Bring a large pot of water to a boil. Blanch the gailan for about 2 minutes until the stems are tender but still crisp. Drain well and arrange the stalks on a serving platter.
- 3
In a small bowl, whisk together the oyster sauce, soy sauce, sesame oil, sugar, and water.
- 4
Heat the vegetable oil in a small pan over medium heat. Add the minced garlic and cook for about 30 seconds until it smells fragrant.
- 5
Pour the sauce mixture into the pan with the garlic and let it bubble for a minute until it thickens slightly.
- 6
Drizzle the hot garlic sauce over the arranged gailan and serve immediately while warm.
๐ก Tips
This dish is best served right away while the greens are hot. If you have leftovers, store them in an airtight container in the fridge for up to two days, though the stalks may lose some of their crunch.
