There is something so comforting about a bowl of perfectly roasted potatoes. Fingerling potatoes are fantastic because they have a lovely buttery texture and a thin skin that gets just crispy enough in the oven.

I love making these because they go with almost everything from a nice steak to a simple roast chicken. My favorite trick is to give them a good toss in the pan halfway through cooking so they get browned on all sides.

Ingredients

  • 2 pounds fingerling potatoes
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme leaves
  • 1 teaspoon sea salt
  • 1/2 teaspoon black pepper

    Preheat your oven to 400 degrees Fahrenheit.

    Wash the potatoes and pat them dry with a clean towel.

    Slice the potatoes in half lengthwise so they cook evenly.

    In a large mixing bowl, combine the olive oil, minced garlic, rosemary, thyme, salt, and pepper.

    Add the potatoes to the bowl and toss until every piece is well coated in the herb oil mixture.

    Spread the potatoes in a single layer on a large rimmed baking sheet.

    Roast for 25 to 30 minutes, turning them once halfway through, until they are golden brown and tender when pierced with a fork.

Store any leftovers in an airtight container in the fridge for up to three days. You can reheat them in a hot skillet with a tiny splash of oil to get their crispy texture back. These potatoes taste great served with a dollop of sour cream or a sprinkle of fresh parsley.
