When you are stuck for dinner ideas and need something fast, these tuna patties are a real lifesaver. They turn simple pantry staples into a meal that feels special, with a lovely crunch on the outside and a tender, flaky center.

I love how versatile these are for any occasion. You can serve them on a toasted bun like a burger, or just keep it light with a fresh green salad on the side. They come together in minutes, so they are perfect for those nights when you really do not feel like cooking.

Ingredients

  • 2 cans of tuna in water, drained
  • 1/2 cup breadcrumbs
  • 1 large egg, lightly beaten
  • 2 tablespoons mayonnaise
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon dried parsley
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste
  • 2 tablespoons olive oil for frying

Instructions

  1. 1

In a medium bowl, flake the drained tuna with a fork until it is fine.

  2. 2

Add the breadcrumbs, beaten egg, mayonnaise, lemon juice, parsley, garlic powder, salt, and pepper to the bowl.

  3. 3

Mix everything together until the ingredients are well combined and hold together when pressed.

  4. 4

Form the mixture into four equal sized patties.

  5. 5

Heat the olive oil in a large skillet over medium heat.

  6. 6

Place the patties in the hot skillet and cook for 3 to 4 minutes on each side until they are golden brown and crispy.

  7. 7

Remove from the heat and serve immediately while they are warm.

๐Ÿ’ก Tips

Serve these warm with a dollop of tzatziki or tartar sauce on top for extra creaminess. If you have leftovers, keep them in an airtight container in the fridge for up to two days and reheat them in a pan to bring back the crisp texture.
