There is something so special about the combination of juicy shrimp and sweet pineapple on the grill. It is one of those simple meals that feels fancy enough for guests but is easy enough to throw together on a busy weeknight.

My top tip for this recipe is to soak your wooden skewers in water for at least thirty minutes before grilling. This prevents them from burning up over the direct heat while your shrimp cooks to perfection.

Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 1 fresh pineapple, cut into 1 inch chunks
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 1 tablespoon lime juice
  • 1 teaspoon sriracha or chili paste
  • 1 tablespoon olive oil
  • 1/2 teaspoon garlic powder
  • Wooden skewers

Instructions

  1. 1

Soak your wooden skewers in water for thirty minutes to prepare them for the grill.

  2. 2

Whisk together the soy sauce, honey, lime juice, sriracha, olive oil, and garlic powder in a small bowl to make your glaze.

  3. 3

Thread the shrimp and pineapple chunks onto the skewers, alternating between the two.

  4. 4

Preheat your grill to medium high heat and lightly oil the grates.

  5. 5

Place the skewers on the grill and brush them generously with the glaze.

  6. 6

Grill for about two to three minutes per side until the shrimp are opaque and pink and the pineapple has nice grill marks.

  7. 7

Remove from the grill and serve immediately with any remaining glaze on the side.

๐Ÿ’ก Tips

Serve these skewers over a bed of fluffy jasmine rice for a complete meal. If you have leftovers, keep them in an airtight container in the fridge for up to two days. They are great cold, but I like to reheat them quickly in a pan.
