Grilled steak is always a favorite at our house. It is quick to cook, feeds a crowd, and feels a little special without requiring a lot of effort.

The secret here is the peach chimichurri. Adding fresh fruit to this classic herb sauce makes it sweet, tangy, and perfect for warm weather. It is a wonderful way to brighten up a savory piece of meat.

Ingredients

  • 2 steaks of your choice, about 1 inch thick
  • 1 tablespoon olive oil
  • Salt and black pepper to taste
  • 1 ripe peach, finely diced
  • 1/2 cup fresh parsley, chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 small shallot, minced
  • 1 clove garlic, minced
  • 1 tablespoon red wine vinegar
  • 2 tablespoons extra virgin olive oil
  • Pinch of crushed red pepper flakes

Instructions

    Take your steaks out of the fridge about 20 minutes before cooking so they come to room temperature.

    In a small bowl, stir together the diced peach, parsley, cilantro, shallot, garlic, red wine vinegar, extra virgin olive oil, and red pepper flakes. Set this aside so the flavors can mingle.

    Pat the steaks dry with paper towels and rub them with the tablespoon of olive oil. Season both sides generously with salt and pepper.

    Heat your grill or a heavy skillet over high heat. Cook the steaks for about 4 to 5 minutes per side for medium rare, or until they reach your preferred level of doneness.
