There is nothing quite like firing up the grill for a meal that comes together with very little effort. This grilled honey lime chicken has become a staple in my kitchen because the marinade uses pantry basics to create such a bright and delicious flavor profile.

My favorite thing about this recipe is how juicy the chicken thighs stay while they cook. Just remember to let the chicken marinate for at least thirty minutes so the lime juice and honey have plenty of time to work their magic.

Ingredients

  • 1/4 cup honey
  • 1/4 cup fresh lime juice
  • 2 tablespoons soy sauce
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1.5 pounds boneless, skinless chicken thighs
  • Salt and black pepper to taste

Instructions

    In a medium bowl, whisk together the honey, lime juice, soy sauce, minced garlic, and olive oil.

    Place the chicken thighs in a large resealable plastic bag or shallow dish and pour the marinade over them.

    Seal the bag or cover the dish and refrigerate for at least thirty minutes, or up to four hours for a deeper flavor.

    Preheat your grill to medium high heat and lightly oil the grates.

    Remove the chicken from the marinade, discarding any extra liquid, and season lightly with salt and pepper.

    Place the chicken on the grill and cook for about 5 to 7 minutes per side, or until the internal temperature reaches 165 degrees Fahrenheit and the chicken is nicely charred.
