  • 1 small onion, diced
  • 1 can red kidney beans, drained and rinsed

  • 1 packet taco seasoning or chili seasoning
  • 1 box corn muffin mix
  • 1 large egg
  • 1/3 cup milk
  • 1 cup shredded cheddar cheese
