There is nothing quite like a warm bowl of beef stew when the weather turns chilly. This recipe is a favorite in my house because it balances the savory richness of beef with the natural sweetness of potatoes and carrots.

My best tip is to sear the beef before adding the liquid. Taking those few extra minutes to brown the meat adds a wonderful depth of flavor to the entire pot.

Ingredients

  • 1 pound beef chuck, cut into bite sized cubes
  • 2 large sweet potatoes, peeled and cubed
  • 3 carrots, sliced into rounds
  • 2 stalks celery, chopped
  • 1 cup frozen corn
  • 1 can diced tomatoes, 14 ounces
  • 4 cups beef broth
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

    Heat the olive oil in a large pot or Dutch oven over medium high heat.

    Add the beef cubes and cook until browned on all sides, then remove the meat and set it aside.

    In the same pot, add the onion, carrots, and celery. Cook for about five minutes until they soften.

    Stir in the garlic and cook for one minute until fragrant.

    Return the beef to the pot and add the tomatoes, broth, thyme, salt, and pepper.

    Bring the stew to a boil, then reduce the heat to low, cover, and let it simmer for one hour.

    Add the sweet potatoes and corn to the pot.

    Continue simmering for another thirty minutes or until the sweet potatoes are tender and the beef pulls apart easily.

Leftovers taste even better the next day once the flavors have had time to meld in the fridge. Store the stew in an airtight container for up to three days or freeze it for a quick meal later. Serve it with a slice of crusty bread to soak up the juices.
