My secret for getting the best flavor is to make sure you brown the sausage well before adding the other ingredients. This adds a nice depth to the beans. If you like a little extra heat, feel free to add a pinch of crushed red pepper flakes or a dash of your favorite hot sauce at the end.

Ingredients

  • 1 tablespoon olive oil
  • 1 pound smoked sausage, sliced into coins
  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 2 cans (15 ounces each) black beans, drained and rinsed
  • 1 cup chicken or vegetable broth
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 4 cups cooked white or brown rice
  • Fresh cilantro for garnish
