There is nothing quite like a big bowl of chicken soup when you need a little comfort. This recipe is a favorite in my kitchen because it comes together quickly, yet it tastes like it has been simmering on the stove all day long.

My secret to this soup is using pearl couscous because it adds a lovely texture that holds up beautifully in the broth. If you have extra veggies in your fridge, feel free to toss them in, as this recipe is very forgiving and welcomes any additions you enjoy.

Ingredients

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 1 cup pearl couscous
  • 1 cup frozen peas
  • 1 teaspoon dried thyme
  • Salt and black pepper to taste
  • Fresh parsley for garnish

Instructions

    Heat the olive oil in a large pot over medium heat.

    Add the onion, carrots, and celery. Cook them for about 5 minutes until they begin to soften.

    Stir in the minced garlic and thyme, cooking for another minute until fragrant.

    Pour in the chicken broth and bring the mixture to a gentle boil.

    Add the pearl couscous and cook for about 8 to 10 minutes, or until the couscous is tender.

Store any leftovers in an airtight container in the fridge for up to three days. Keep in mind that the couscous will soak up more broth as it sits, so add a splash of water or extra stock when reheating to get the consistency just right.
