There is nothing quite like coming home to the smell of a warm meal waiting for you. This chicken stew is a family favorite because it uses simple ingredients to create a thick and savory broth that tastes like it simmered all day long.

My favorite thing about this recipe is how easy it is to customize. You can use whatever root vegetables you have on hand, like parsnips or sweet potatoes, and it will turn out delicious every single time.

Ingredients

  • 1.5 pounds chicken breast, cut into chunks
  • 4 cups chicken broth
  • 3 large carrots, peeled and sliced
  • 3 stalks celery, chopped
  • 1 onion, diced
  • 4 gold potatoes, cubed
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1/2 cup frozen peas
  • 2 tablespoons cornstarch mixed with 2 tablespoons water
  • Salt and pepper to taste

Instructions

    Place the chicken, carrots, celery, onion, potatoes, and garlic into your slow cooker.

    Sprinkle the thyme, rosemary, salt, and pepper over the top of the ingredients.

    Pour the chicken broth over everything until the ingredients are mostly covered.

    Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours.

    About 30 minutes before serving, stir in the frozen peas.

    Stir in the cornstarch mixture to thicken the broth and let it cook for another 20 minutes until the stew is nice and rich.
