This chicken taco soup is one of my go to recipes when I need something simple but satisfying for the family. It is a true crowd pleaser because everyone can customize their own bowl with their favorite toppings like cheese, avocado, or crunchy tortilla chips.

I love making this in the crockpot because it saves me so much time during busy weekdays. My best tip is to shred the chicken right inside the pot with two forks so it absorbs all the juices before you serve it.

Ingredients

  • 1 pound boneless skinless chicken breasts
  • 1 can black beans, drained and rinsed
  • 1 can pinto beans, drained and rinsed
  • 1 can diced tomatoes with green chilies
  • 1 cup frozen corn
  • 1 small onion, diced
  • 2 cups chicken broth
  • 1 packet taco seasoning
  • 1 teaspoon ground cumin
  • Optional toppings: shredded cheddar cheese, sour cream, cilantro, avocado, tortilla strips

Instructions

    Place the chicken breasts at the bottom of your slow cooker.

    Pour the beans, diced tomatoes, corn, and onion over the chicken.

    Add the chicken broth, taco seasoning, and cumin to the pot.

    Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours.

    Use two forks to shred the chicken directly in the soup once it is tender.

    Stir everything together and serve warm with your favorite toppings.

Store any leftovers in an airtight container in the fridge for up to three days. This soup also freezes beautifully for a quick lunch later in the month. If you want a bit of extra heat, add a diced jalapeΓ±o when you start the cooking process.
