This Greek lemon soup, known as avgolemono, is one of my favorite comfort foods. It is famous for its creamy texture that comes from a special technique of whisking eggs and lemon together rather than adding any actual dairy. It is light yet filling enough to serve as a complete meal on a chilly day.

My top tip for this recipe is to temper the egg mixture carefully. Pouring a little of the hot broth into the eggs slowly keeps them from scrambling, which ensures your soup stays smooth and velvety instead of chunky. Ingredients

  • 6 cups chicken broth
  • 1/2 cup uncooked white rice
  • 2 cups shredded cooked chicken
  • 3 large eggs
  • 1/4 cup fresh lemon juice
  • Salt and black pepper to taste
  • Fresh parsley for garnish

Instructions

    Bring the chicken broth to a boil in a large pot over medium high heat.
