There is something so satisfying about a warm, toasted burrito filled with seasoned beef and fluffy rice. These are a favorite in my house because everyone can add their favorite toppings to make their dinner just right.

My biggest tip is to warm your tortillas in a dry pan for a few seconds before filling them. It makes them much easier to roll without tearing, and it adds a lovely toasted flavor to the finished meal.

Ingredients

  • 1 pound ground beef
  • 1 packet taco seasoning
  • 2 cups cooked white rice
  • 1/4 cup fresh chopped cilantro
  • 1 tablespoon lime juice
  • 1 can refried beans
  • 2 cups shredded cheddar or monterey jack cheese
  • 6 large flour tortillas

Instructions

    Brown the ground beef in a large skillet over medium heat until fully cooked.

    Drain the excess grease from the pan and stir in the taco seasoning along with a splash of water, then let it simmer for a few minutes.

    In a separate bowl, mix the cooked rice with the chopped cilantro and lime juice.

    Warm the tortillas in a clean skillet or microwave to make them pliable.

    Lay a tortilla flat and spread a spoonful of refried beans down the center.

    Top the beans with a portion of the seasoned beef, the cilantro lime rice, and a generous sprinkle of cheese.

    Fold the sides of the tortilla in, then roll it tightly from the bottom to create a sealed burrito.

    Place the burritos seam side down in a warm skillet for a minute to toast the outside before serving.

You can wrap these in foil and keep them in the fridge for up to three days. If you like a little extra heat, feel free to add some sliced jalapeΓ±os or your favorite hot sauce before rolling. Serve these with a side of sour cream or fresh salsa for dipping.
