There is something so special about a warm bowl of soup at the end of a long day. This Italian sausage orzo soup is one of my favorite go to dinners because it brings together hearty ingredients like fresh vegetables and tiny orzo pasta in a savory broth that feels like a big hug in a bowl.

My best tip for this recipe is to brown the sausage really well before adding your liquids. Getting those little crispy bits on the bottom of the pot adds a deep flavor that really makes the whole dish taste like it simmered on the stove for hours.

Ingredients

  • 1 pound mild Italian sausage, casings removed
  • 1 tablespoon olive oil
  • 1 medium yellow onion, diced
  • 2 carrots, peeled and sliced
  • 2 stalks celery, sliced
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 1 can diced tomatoes, 14.5 ounces
  • 1 cup uncooked orzo pasta
  • 2 cups fresh spinach, chopped
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste

Instructions

    Heat the olive oil in a large pot or Dutch oven over medium heat.

    Add the sausage and cook until browned, breaking it apart with a wooden spoon as you go.

    Add the onion, carrots, and celery to the pot and cook until the vegetables soften, about five minutes.

    Stir in the garlic and oregano and cook for another minute until fragrant.

    Pour in the chicken broth and the diced tomatoes with their juices.
