There is nothing better than a big pot of lentil soup on a chilly evening. This Mediterranean style version is a family favorite because it uses simple pantry staples and fresh lemon to make the flavors pop.

I love making this for a quick weeknight dinner. A quick tip is to stir in a handful of fresh spinach right before you serve it so it wilts just perfectly in the heat.

Ingredients

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 cup dried brown or green lentils, rinsed
  • 1 can diced tomatoes
  • 6 cups vegetable broth
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • 2 tablespoons fresh lemon juice
  • Salt and black pepper to taste
  • Fresh parsley for garnish

Instructions

    Heat the olive oil in a large pot over medium heat.

    Add the onion, carrots, and celery. Cook until the vegetables start to soften, which takes about 5 minutes.
