These colorful bell peppers are filled with seasoned beef, fluffy rice, and plenty of melted cheese for a satisfying meal.

Mexican stuffed peppers are a favorite at my house because they are so filling and easy to put together. Everyone loves how the peppers get nice and tender in the oven while holding all that tasty taco filling inside.

I find that using fresh bell peppers of different colors makes the dish look beautiful on the dinner table. If you want to save some time on a busy weeknight, you can even prepare the filling a day ahead of time.

Ingredients

  • 4 large bell peppers, tops removed and seeded
  • 1 pound ground beef
  • 1 packet taco seasoning
  • 2 cups cooked white rice
  • 1 cup canned black beans, rinsed and drained
  • 1 cup corn kernels
  • 1.5 cups shredded cheddar cheese, divided
  • 1/2 cup tomato salsa
  • Fresh cilantro for garnish

Instructions

    Preheat your oven to 375 degrees Fahrenheit.

    Bring a large pot of water to a boil and carefully blanch the peppers for about 3 minutes, then drain them well.

    In a large skillet over medium heat, cook the ground beef until it is browned, then drain off any excess fat.

    Stir the taco seasoning and a splash of water into the beef according to the seasoning packet instructions.

    Add the cooked rice, black beans, corn, half of the shredded cheese, and the salsa to the skillet and stir until everything is combined.

    Stuff each bell pepper generously with the beef and rice mixture.

    Place the peppers upright in a baking dish and top each one with the remaining cheese.

    Bake for 20 to 25 minutes until the peppers are tender and the cheese is bubbly and golden.

    Serve warm with a garnish of fresh cilantro.

These peppers keep very well in the refrigerator for up to three days in an airtight container. If you have leftovers, they reheat perfectly in the microwave for a quick lunch. You can serve these with a dollop of sour cream or some fresh avocado slices on the side.
