Hobo foil packets are a favorite at our house because they are so versatile and fun to make. Using smoked sausage instead of traditional ground beef gives the dish a lovely, smoky flavor that pairs perfectly with the roasted vegetables.

I love making these on busy weeknights or for backyard bonfires. A quick tip is to slice your vegetables into similar sizes so they cook through at the same time and come out perfectly tender every single bite.

Ingredients

  • 1 pound smoked sausage, sliced into rounds
  • 4 medium potatoes, diced into small cubes
  • 2 large carrots, peeled and sliced
  • 1 yellow onion, chopped
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • Salt and black pepper to taste

Instructions

    Preheat your oven to 400 degrees Fahrenheit or get your grill ready for medium heat.

    Cut four large squares of heavy duty aluminum foil.

    In a large bowl, combine the sliced sausage, diced potatoes, carrots, and onion.
