Hearty Shepherd’s Pie Soup

Ingredients
- 1 pound ground beef
- 1 onion, diced
- 2 cloves garlic, minced
- 2 cups potatoes, peeled and cubed
- 2 cups beef broth
- 1 cup frozen peas and carrots
- 1 teaspoon dried thyme
- 2 tablespoons tomato paste
- 1 tablespoon Worcestershire sauce
- 1/2 cup heavy cream
- Salt and black pepper to taste
- Fresh parsley for garnish

Brown the ground beef in a large pot over medium heat until it is cooked through, then drain off the excess fat.

Store any leftovers in an airtight container in the fridge for up to three days. This soup tastes even better the next day after the flavors have had time to meld together. If the soup gets too thick in the fridge, just add a splash of beef broth when you reheat it.
