This sweet potato chili is a wonderful way to warm up on a chilly evening. It is packed with fiber and protein, making it a satisfying meal that leaves everyone feeling full and happy at the dinner table.

I love making this for busy weeknights because the leftovers taste even better the next day. If you want a little extra heat, feel free to add a pinch of crushed red pepper flakes while it simmers.

Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 large sweet potatoes, peeled and cut into 1 inch cubes
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1 can (14.5 ounces) fire roasted diced tomatoes
  • 2 cups vegetable broth
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • Salt and black pepper to taste
  • Fresh cilantro and sour cream for serving

Instructions

  1. 1

Heat the olive oil in a large pot over medium heat.

  2. 2

Add the onion and cook until it is soft and translucent, about 5 minutes.

  3. 3

Stir in the garlic and cook for another minute until fragrant.

  4. 4

Add the cubed sweet potatoes, chili powder, and cumin. Stir well to coat the potatoes in the spices.

  5. 5

Pour in the black beans, fire roasted tomatoes, and vegetable broth.

  6. 6

Bring the mixture to a gentle boil, then turn the heat down to low.

  7. 7

Cover the pot and simmer for 25 to 30 minutes, or until the sweet potatoes are tender when pierced with a fork.

  8. 8

Taste and add salt or pepper if needed before serving warm with your favorite toppings.

๐Ÿ’ก Tips

Store any leftovers in an airtight container in the fridge for up to four days. You can also freeze this chili for up to three months. Serve it topped with sliced avocado, a dollop of sour cream, and fresh cilantro for the best experience.
