Beans are such a pantry hero for busy weeknights because they are affordable, healthy, and incredibly filling. This chili is one of my favorite ways to use up a variety of beans while keeping everyone at the dinner table happy and full.

I love serving this with a little bit of shredded cheese on top or a dollop of sour cream. If you have leftovers, they actually taste even better the next day after the flavors have had some time to hang out together in the fridge.

Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 can black beans, drained and rinsed
  • 1 can kidney beans, drained and rinsed
  • 1 can garbanzo beans, drained and rinsed
  • 1 can diced tomatoes
  • 1 cup vegetable broth
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • Salt and black pepper to taste

Instructions

    Heat the olive oil in a large pot over medium heat.

    Add the onion and cook until it is soft and translucent, which usually takes about five minutes.

    Stir in the garlic and cook for another minute until it smells fragrant.

    Pour in the black beans, kidney beans, garbanzo beans, diced tomatoes, and vegetable broth.

    Add the chili powder, cumin, salt, and pepper.

    Stir everything well and bring the chili to a gentle simmer.

    Let it cook for fifteen to twenty minutes so the flavors can blend together, then serve warm.

Store any leftover chili in an airtight container in the fridge for up to four days. You can serve this over rice to make it go further or enjoy it with a side of warm cornbread.
