There is something so satisfying about a big bowl of vegetable masala served over fluffy rice. It is one of my favorite ways to pack a lot of colorful veggies into a single meal while enjoying those deep, warming spices we all love.

This recipe is very forgiving, so feel free to use whichever vegetables you have in the fridge. If you want a bit of extra creaminess, stir in a splash of coconut milk or heavy cream right at the end before you serve it.

Ingredients

  • 2 tablespoons vegetable oil
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • 1 teaspoon turmeric powder
  • 1 teaspoon chili powder
  • 1 can crushed tomatoes
  • 2 cups mixed vegetables like carrots, peas, and cauliflower
  • 1 cup water
  • 1/2 cup heavy cream or coconut milk
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

    Heat the oil in a large pan over medium heat and add the onion, cooking until it turns golden brown.

    Stir in the garlic and ginger, then cook for another minute until fragrant.

    Add the cumin, coriander, turmeric, and chili powder to the pan and stir for thirty seconds to toast the spices.

    Pour in the crushed tomatoes and water, bringing the mixture to a gentle simmer.

    Add your mixed vegetables, cover the pan, and cook for about fifteen minutes or until the veggies are tender.

    Pour in the cream and stir well to combine, then season with salt according to your taste.
