There is something so comforting about a hearty bowl filled with colorful ingredients. This BBQ chicken bowl is one of my favorite quick dinners because it hits every craving with sweet potatoes, tangy pickled onions, and creamy avocado.

I love prepping the chicken and sweet potatoes ahead of time so I can just toss everything together on busy nights. If you have some extra time, roasting the potatoes until the edges are crispy makes a huge difference in the final texture.

Ingredients

  • 2 chicken breasts, cooked and diced
  • 1/2 cup your favorite BBQ sauce
  • 1 large sweet potato, peeled and cubed
  • 2 cups cooked white or brown rice
  • 1 ripe avocado, sliced
  • 1/4 cup pickled red onions
  • 1 tablespoon olive oil
  • Salt and black pepper to taste
  • Fresh cilantro for garnish

Instructions

    Preheat your oven to 400 degrees Fahrenheit.

    Toss the cubed sweet potatoes with olive oil, salt, and pepper on a baking sheet.

    Roast the sweet potatoes for about 20 to 25 minutes until they are tender and golden.

    While the potatoes roast, toss your diced chicken in a bowl with the BBQ sauce until well coated.

    To assemble, divide the cooked rice into two bowls.

    Top the rice with the saucy BBQ chicken, roasted sweet potatoes, fresh avocado slices, and pickled onions.

    Garnish with a sprinkle of fresh cilantro before serving.

Store the chicken, rice, and potatoes in separate containers in the fridge for up to three days. Keep the avocado fresh by adding it right before you eat. You can swap the rice for quinoa if you want a different texture.
