There is something so special about a warm casserole pulled straight from the oven. This version skips the canned soup and uses simple pantry staples to create a creamy and delicious dinner that the whole family will love.

My favorite thing about this recipe is how easy it is to put together on a busy weeknight. If you want to save even more time, you can cook the chicken and rice in advance so you are ready to assemble it when you get home.

Ingredients

  • 2 cups cooked chicken, shredded
  • 2 cups cooked white rice
  • 2 cups broccoli florets, steamed
  • 2 cups shredded cheddar cheese
  • 2 tablespoons butter
  • 2 tablespoons all purpose flour
  • 1.5 cups milk
  • 0.5 cup chicken broth
  • 1 teaspoon garlic powder
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Instructions

  1. 1

Preheat your oven to 350 degrees Fahrenheit and lightly grease a 9 by 13 inch baking dish.

  2. 2

Melt the butter in a saucepan over medium heat, then whisk in the flour and cook for one minute.

  3. 3

Slowly pour in the milk and chicken broth while whisking constantly until the mixture thickens into a smooth sauce.

  4. 4

Stir in the garlic powder, salt, pepper, and one cup of the shredded cheddar cheese until melted.

  5. 5

In a large bowl, combine the cooked chicken, rice, steamed broccoli, and the cheese sauce.

  6. 6

Pour the mixture into your prepared baking dish and sprinkle the remaining cup of cheese over the top.

  7. 7

Bake for 20 to 25 minutes until the cheese is bubbly and golden brown.

๐Ÿ’ก Tips

This casserole keeps perfectly in the fridge for up to three days. Just cover it tightly with foil and reheat individual portions in the microwave. If you enjoy a little crunch, sprinkle some toasted breadcrumbs over the cheese before baking.
