Chicken pho is a favorite in my house because it manages to be both light and deeply satisfying at the same time. The combination of ginger, star anise, and fresh herbs makes the whole kitchen smell amazing while the broth simmers on the stove.

I love serving this on a chilly evening when everyone needs a little something extra to feel cozy. Just make sure to have all your toppings ready in small bowls so everyone can customize their own portion exactly how they like it.

Ingredients

  • 1 whole chicken, about 3 pounds
  • 1 large yellow onion, halved
  • 3 inches fresh ginger, sliced into thick coins
  • 4 whole star anise
  • 1 cinnamon stick
  • 1 tablespoon fish sauce
  • 1 teaspoon sugar
  • 8 ounces dried rice noodles
  • 1 cup fresh bean sprouts
  • 1 bunch fresh cilantro, chopped
  • 1 lime, cut into wedges
  • 1 fresh chili, thinly sliced
  • Salt to taste

Instructions

    Place the whole chicken in a large pot and cover with water. Add the onion, ginger, star anise, cinnamon, fish sauce, sugar, and a pinch of salt.

    Bring the pot to a gentle boil, then turn the heat down to low. Let it simmer for about an hour until the chicken is cooked through.

    Carefully remove the chicken from the pot. Shred the meat away from the bones and set it aside, discarding the skin and bones.

    Strain the broth through a fine mesh sieve to remove any bits of spice or onion. Taste and add a little more salt or fish sauce if you like.

    Prepare the rice noodles according to the package directions, usually by soaking them in boiling water for a few minutes until tender.

    Divide the cooked noodles into bowls. Top with the shredded chicken and ladle the hot broth over everything.

    Serve immediately with a plate of bean sprouts, fresh cilantro, lime wedges, and chili slices on the side.

You can store leftover broth in the fridge for up to three days, but keep the noodles separate so they do not soak up all the liquid. If you want a bit more texture, thinly sliced green onions make a wonderful addition to the final bowl.
