I started making this at home to satisfy my cravings for good Tex Mex food, and it is honestly so much better than paying for takeout. It uses basic pantry staples and is a fantastic way to prepare protein for the whole week.

Ingredients

  • 2 pounds boneless skinless chicken breasts
  • 1/2 cup red onion, chopped
  • 3 cloves garlic, minced
  • 1/4 cup olive oil, plus extra for cooking
  • 2 tablespoons adobo sauce from a can of chipotle peppers
  • 1 tablespoon distilled white vinegar
  • 1 tablespoon lime juice
  • 1 tablespoon chipotle chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons water

Instructions

    Rinse the chicken breasts and pat them dry with paper towels.

    Place the chicken between pieces of plastic wrap and pound it to an even half inch thickness.

    Combine the onion, garlic, olive oil, adobo sauce, vinegar, lime juice, spices, and water in a food processor. Blend until the marinade is smooth.

    Place the chicken in a large resealable bag, pour the marinade over it, and seal the bag while pressing out the air. Marinate in the refrigerator for at least 6 hours or ideally overnight.

    Heat a grill pan over medium high heat. Cook the chicken for 5 to 6 minutes per side until it reaches an internal temperature of 155 degrees Fahrenheit.

    Remove the chicken from the heat and let it rest for 10 minutes, then chop it into bite sized cubes.

    Heat 2 tablespoons of olive oil in a large skillet over medium high heat. Add the cubed chicken and cook, stirring occasionally, until it becomes golden and crispy.
