There is something so special about bringing home an ice cream cake for a celebration or just to make a random Tuesday feel like a party. It is the perfect cool treat to enjoy when the sun is out and you want to share a sweet moment with your family.

My top tip for making this at home is to let your ice cream soften on the counter for about ten minutes before you start. It makes spreading the layers so much easier and keeps everything smooth and even.

Ingredients

  • 2 quarts vanilla ice cream
  • 1 quart chocolate ice cream
  • 24 chocolate sandwich cookies
  • 4 tablespoons unsalted butter, melted
  • 1 cup chocolate fudge sauce
  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • Chocolate sprinkles for topping

Instructions

    Take the vanilla ice cream out of the freezer and let it soften slightly on the counter.

    Line a springform pan with parchment paper or plastic wrap for easy removal later.

    Crush the chocolate cookies into fine crumbs using a food processor or a sealed plastic bag and a rolling pin.

    Mix the cookie crumbs with the melted butter and press the mixture firmly into the bottom of your pan to create a crust.

    Spread the softened vanilla ice cream over the crust, smooth the top, and put the pan in the freezer for one hour to firm up.
