If you love those famous coffee shop bars, you are going to adore making them right in your own kitchen. They have a lovely ginger spice flavor that pairs perfectly with tart dried cranberries and creamy white chocolate.

I find these bars taste even better after they have had a chance to set in the fridge for a couple of hours. They are the perfect treat to bring to a holiday gathering or just to keep on hand for a special afternoon pick me up.

Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup packed brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon orange extract
  • 2 cups all purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground ginger
  • 1 cup dried cranberries, chopped
  • 1 cup white chocolate chips
  • 4 ounces cream cheese, softened
  • 2 cups powdered sugar
  • 1/4 cup white chocolate chips for drizzling

Instructions

    Preheat your oven to 350 degrees Fahrenheit and line a 9 by 13 inch baking pan with parchment paper.

    Cream the butter and brown sugar together in a large bowl until smooth and fluffy.

    Mix in the eggs, vanilla extract, and orange extract until well combined.

    Stir in the flour, baking powder, salt, and ground ginger until the dough comes together.

    Fold in the dried cranberries and one cup of white chocolate chips.

    Spread the thick batter evenly into your prepared baking pan.

    Beat the cream cheese and powdered sugar together until smooth, then spread it over the cooled bars.
