This creamy tomato pasta is one of those meals that feels like a big hug in a bowl. It is simple to pull together on a busy weeknight using pantry staples, but it tastes like something you would order at a nice neighborhood Italian restaurant.

I love how the tangy tomatoes pair with the smooth cream. It is a fantastic base recipe, so feel free to stir in a handful of fresh spinach or some cooked sausage if you have it in the fridge.

Ingredients

  • 12 ounces penne pasta
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 can (15 ounces) crushed tomatoes
  • 1 cup heavy cream
  • 1/2 cup grated parmesan cheese
  • 1/4 cup fresh basil leaves, chopped
  • Salt and black pepper to taste

Instructions

  1. 1

Bring a large pot of salted water to a boil and cook the penne according to the package directions until al dente.

  2. 2

While the pasta cooks, heat the olive oil in a large skillet over medium heat.

  3. 3

Add the minced garlic and cook for about one minute until fragrant, making sure not to let it brown.

  4. 4

Pour in the crushed tomatoes and stir well, letting the sauce simmer gently for about five minutes.

  5. 5

Reduce the heat to low and pour in the heavy cream, stirring constantly until the sauce turns a lovely pink color.

  6. 6

Add the parmesan cheese and stir until the sauce is smooth and melted.

  7. 7

Drain the cooked pasta and add it directly into the skillet with the sauce.

  8. 8

Toss everything together until the pasta is well coated, then stir in the fresh basil and season with salt and pepper before serving.

๐Ÿ’ก Tips

Leftovers keep well in an airtight container in the fridge for up to three days. If the sauce thickens too much after cooling, just add a splash of water or milk when you reheat it on the stove.
