There is something so satisfying about biting into a hot, crispy chicken sandwich at home. This recipe features a crunchy coating and a juicy center that keeps everyone coming back for seconds.

My favorite trick for this recipe is to make sure your oil is at the right temperature before you start frying. If you have a kitchen thermometer, aim for 350 degrees to get that perfect golden crust without burning the outside.

Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 cup all purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1 cup buttermilk
  • Vegetable oil for frying
  • 2 brioche buns
  • 2 tablespoons butter
  • 4 tablespoons mayonnaise
  • 2 leaves of lettuce
  • 4 pickle slices

Instructions

    Slice each chicken breast in half horizontally to create thinner cutlets, then pound them to an even thickness.

    In a shallow bowl, whisk the flour with the salt, pepper, garlic powder, and paprika.

    Dip each chicken piece into the buttermilk, then dredge it thoroughly in the flour mixture until well coated.

    Heat about an inch of oil in a large skillet over medium heat.

    Fry the chicken for about 4 to 5 minutes on each side until the crust is golden brown and the chicken is cooked through.

    While the chicken drains on a paper towel, butter the inside of your buns and toast them in a separate pan until light brown.

    Spread a generous amount of mayonnaise on the buns and assemble your sandwiches with the chicken, lettuce, and pickles.
