There is something truly special about the smell of fresh tomatoes and garlic simmering on the stove. This sauce is a wonderful way to use up a garden harvest or just enjoy the flavor of ripe tomatoes at their peak.

It is incredibly versatile and works perfectly as a base for pasta or even as a topping for homemade pizza. Feel free to stir in a splash of cream or a handful of parmesan cheese if you want a richer finish.

Ingredients

  • 3 pounds fresh tomatoes, chopped
  • 1 large yellow onion, finely diced
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • A pinch of sugar to balance acidity

Instructions

  1. 1

Heat the olive oil in a large pot over medium heat.

  2. 2

Add the diced onion and cook until it turns soft and golden brown.

  3. 3

Stir in the minced garlic and cook for another minute until fragrant.

  4. 4

Add the chopped tomatoes, oregano, salt, pepper, and sugar to the pot.

  5. 5

Reduce the heat to low and let the sauce simmer for 45 minutes until the tomatoes break down and the sauce thickens.

  6. 6

Use a spoon to lightly crush any large pieces of tomato, or use an immersion blender if you prefer a smoother texture.

๐Ÿ’ก Tips

Store leftover sauce in an airtight container in the fridge for up to 4 days. You can also freeze this sauce in freezer bags for up to 3 months for a quick dinner later.
