There is something so nostalgic about these little cookies. They are buttery, sweet, and perfectly crisp, making them hard to resist when you want a simple afternoon snack with your coffee.

To get the best results, make sure your butter is softened to room temperature before you start mixing. It makes the dough much easier to handle and ensures the cookies bake up beautifully.

Ingredients

  • 1 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 and 1/2 cups all purpose flour
  • 1/2 teaspoon salt
  • 1 cup semi sweet chocolate chips
  • 1 tablespoon coconut oil

Instructions

  1. 1

Preheat your oven to 350 degrees Fahrenheit and line a large baking sheet with parchment paper.

  2. 2

In a large bowl, cream together the softened butter and sugar until the mixture is light and fluffy.

  3. 3

Beat in the egg and the vanilla extract until well combined.

  4. 4

Gradually stir in the flour and salt until a soft dough forms.

  5. 5

Roll small portions of dough into balls, place them on your baking sheet, and press them down into flat discs.

  6. 6

Bake for 10 to 12 minutes until the edges are just barely golden. Let them cool completely on a wire rack.

  7. 7

Melt the chocolate chips and coconut oil together in the microwave in short bursts, stirring until smooth.

  8. 8

Dip the bottom of each cooled cookie in chocolate, then use a fork to drizzle stripes across the top. Let them sit until the chocolate sets.

๐Ÿ’ก Tips

Store these cookies in an airtight container at room temperature to keep them fresh. If you want the chocolate to set quickly, pop the dipped cookies into the fridge for about ten minutes.
