There is something special about the combination of juicy grilled chicken, crisp vegetables, and cool tzatziki sauce wrapped in soft pita. It is one of my favorite meals to put together when I want something that feels like a treat but stays fresh and light.

My secret for the best result is letting the chicken marinate for at least an hour so the lemon and herbs really soak in. If you have extra time, do not skip that step because it makes all the difference in the world.

Ingredients

  • 1.5 pounds boneless skinless chicken thighs, cut into strips
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 tablespoon lemon juice
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 to 6 pita bread rounds
  • 1 cup tzatziki sauce
  • 1 red onion, thinly sliced
  • 2 tomatoes, diced
  • 1 cup chopped cucumber
  • 1/2 cup crumbled feta cheese

Instructions

    Whisk the olive oil, minced garlic, lemon juice, oregano, salt, and pepper in a medium bowl.

    Add the chicken strips to the marinade and toss them until well coated. Cover the bowl and refrigerate for at least one hour.

    Heat a large skillet or grill pan over medium high heat.

    Cook the chicken for about 6 to 8 minutes until it is browned and cooked through completely.

    Warm the pita breads in a clean pan or the microwave for a few seconds so they are soft and pliable.

    Spread a generous amount of tzatziki onto each pita, then top with the cooked chicken, onions, tomatoes, cucumbers, and a sprinkle of feta cheese.

    Roll the pitas up or fold them in half to serve.

You can store leftover chicken in an airtight container in the fridge for up to three days. Keep your veggies and tzatziki separate from the pitas until you are ready to eat so everything stays fresh and crisp.
