Making kombucha at home is such a rewarding hobby. There is something special about watching the fermentation process happen and knowing exactly what goes into your glass. Plus it saves so much money compared to buying those expensive bottles at the store.

My biggest tip for beginners is to always keep your equipment very clean. A little bit of patience goes a long way because the longer it sits, the tangier it becomes. I love adding fresh ginger and honey for a zingy flavor that tastes just like the store bought versions.

Ingredients

  • 1 gallon filtered water
  • 1 cup white sugar
  • 8 bags black tea
  • 2 cups starter kombucha from a previous batch or store bought unflavored
  • 1 SCOBY culture
  • 2 tablespoons fresh grated ginger
  • 2 tablespoons honey

Instructions

    Boil 4 cups of the water and stir in the sugar until it dissolves completely.

    Add the tea bags and let them steep for about 10 minutes before removing them.

    Add the remaining water to bring the mixture to room temperature.

    Pour the sweetened tea into a large glass jar and add the starter kombucha and your SCOBY.

    Cover the jar with a clean cloth secured by a rubber band and store it in a warm dark place for 7 to 10 days.

    Taste the brew after a week to see if it reaches your preferred level of tartness.

    Remove the SCOBY and a little liquid for your next batch.

    Stir the honey and ginger into the remaining liquid and pour into bottles for a second fermentation at room temperature for 2 or 3 days to build carbonation.

Store your finished bottles in the refrigerator to stop the fermentation process and keep them fizzy. You can serve this over ice with a fresh sprig of mint for a lovely presentation.
