These bowls have become a favorite in my house because they balance sweet, spicy, and savory flavors so perfectly. It feels like a fancy takeout meal made right in your own kitchen.

While this recipe takes a little bit of prep work, you can easily cook the chicken and grain components ahead of time to make your weeknight dinner assembly much faster.

Ingredients

  • 1 pound chicken breast, cut into bite sized pieces
  • 1/2 cup flour
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1/3 cup honey
  • 1 tablespoon chili flakes
  • 1 tablespoon apple cider vinegar
  • 2 cups cooked brown rice or quinoa
  • 2 cups chopped kale or mixed greens
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, sliced
  • 1/4 cup feta cheese crumbles

Instructions

    In a shallow bowl, mix the flour with the paprika, garlic powder, salt, and pepper.

    Toss the chicken pieces in the flour mixture until they are well coated.

    Heat the olive oil in a large skillet over medium heat and cook the chicken until golden brown and cooked through, about 6 to 8 minutes.

    In a small saucepan, combine the honey, chili flakes, and vinegar over low heat until warm and slightly runny.
