This lemon bread is one of my favorite things to bake when I want something sweet and simple. It has a lovely, moist crumb that reminds me of a classic pound cake, and it packs a real punch of fresh lemon flavor in every single bite.

My top tip for this recipe is to make sure your butter and eggs are at room temperature before you start mixing. This helps everything blend together perfectly so you get that wonderful, tender texture we all love.

Ingredients

  • 1 1/2 cups all purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup granulated sugar
  • 1 tablespoon lemon zest
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 cup whole milk
  • 2 tablespoons fresh lemon juice
  • 1 cup powdered sugar, for the glaze
  • 1 tablespoon fresh lemon juice, for the glaze

Instructions

    Preheat your oven to 350 degrees F and grease a standard loaf pan with butter or cooking spray.

    Whisk the flour, baking powder, and salt together in a small bowl.

    In a separate large bowl, rub the lemon zest into the granulated sugar with your fingertips until fragrant.

    Add the softened butter to the sugar and beat until the mixture is light and fluffy.

    Add the eggs one at a time, mixing well after each one, then stir in the lemon juice.

    Add the dry ingredients to the butter mixture in three parts, alternating with the milk, and stir just until the batter is smooth.

    Pour the batter into your prepared pan and bake for 45 to 50 minutes, or until a toothpick comes out clean.

    Let the loaf cool in the pan for 10 minutes before moving it to a wire rack.

    Whisk the powdered sugar and lemon juice together to make a glaze and drizzle it over the bread once it has cooled completely.

Store your leftover lemon loaf in an airtight container at room temperature for up to three days. If you prefer, you can wrap the bread tightly and freeze it for up to two months. It tastes wonderful served with a hot cup of tea or coffee.
